As a professional consultancy group, we would advise a local restaurant to slightly change the services offered. Until the pandemic, the restaurant was very famous among residents and tourists. Their key that led to such a spectacular success (in the form of several dozen meters long queues of customers waiting for a table) was the preparation of one type of simple, fresh and tasty pizza. The restaurant's menu was based on homemade borscht and classic pizzas with cheese and mushrooms. Two items on the menu surprisingly encouraged customers to visit, what's more, they visited restaurants whenever possible, wanting to taste the specialties again. Unfortunately, during the pandemic, a small place that wanted to maintain the sanitary regime was able to offer customers only two tables. The idea of delivering the dishes to the customer by the supplier was not satisfactory for the restaurant owner and the guests, because of the delivery time and the number of people willing to make the customers get their pizza and cold borscht. The reheated once prepared pizza did not taste the same as the one served in the restaurant. Bearing in mind the ideas of running the business of the restaurant owner and maintaining high satisfaction of customers, who cannot taste the dishes in the restaurant, we would recommend selling warm take-out soup in thermal jars sold on-site or delivered directly to the place of order by paying a deposit. It would be possible to reuse the container when making another purchase of the soup. If someone wanted to return it, the deposit would also be returned. Another idea is to unbaked the pizza and packs it in airtight plastic packaging so that it can be stored for some time in the refrigerator. Customers can finish preparing pizza on their own in the oven and enjoy a hot pizza almost as if they were in a restaurant. This solution also allows customers to buy pizza in advance. If they only want a pizza from their favorite restaurant, they just need to bake it in the oven. Putting these ideas into practice will not make the process much longer. It is enough to keep the pizza in the oven for a shorter time, buy a machine for packing food in plastic packaging, and also purchase an additional refrigerator to store ready-made pizzas. An additional expense will also be the purchase of thermal soup jars.
Putting these products on the market would be relatively quick. The company would need time to buy the necessities - thermal jars for the soup, a refrigerator and a hermetic packing machine for the pizzas. Introducing the take-out soup would take about a week, which makes a fast response for the unexpected difficulties. The frozen pizza would take another two weeks, as there needs to be larger research done about the devices and it requires more money. To summarize, after three weeks of work both solutions would be perfectly ready for customers to try them out and hopefully fall in love with them.
The chef can use the already bought ingredients to make various soups, as he has great experience in cooking in general, not only pizza making. The only developement expense would be the purchase of the jars, therefore developement and marketing of take-out soup would be financed from the company's savings. With a base of loyal customers, lots of marketing would not be needed - posts on social media and a banner would be enough. By adding the income from the soup to the remaining savings, government's help and a loan, it would become possible to introduce the second product - the frozen pizza. After the purchase of the equipement, there would be new signs installed and promotion pictures posted on SM, financed from remaining money.
The company should take out a mortgage and return the restaurant property as collateral. The loan will be granted because it is a safe and low-risk business. For the company, paying off the loan will not be a problem provided that the loan instalment does not exceed 10% of profits.
